Seafood Specialties will allocate enough time to arrive, setup, cook and serve you and your guests promptly at your predetermined serve time.
All cooking will be performed on site using our free standing propane cooker bases and stock pots with steamer baskets. All ingredients are cooked separately.

Serving will be performed in a walk thru buffet style setup. Lobsters will be plated up first after we split the tails and crack the claws. Your guests will be served as they continue thru the buffet.
If you have selected a two course clambake, the first course will consist of garden salad and clam chowder, rolls and butter and will be served in the same manner unless otherwise requested.
Beach Bakes verses Private Residence/Function halls.

In my twenty plus years experiences 90% of my functions have been held at private residence or function halls. Although the idea of an on the beach clam bake is romanticized or sounds appealing I try to steer clients away from beach clam bakes for a number of reasons. There are many more variables with a beach bake of which most are 100% out of my control. I.E. Biting bugs, wind, (wind drastically affects cooking time), rain, tidal effects, access, sand storm. If you insist on a beach bake we can and will accommodate provided you understand the risks with the variables involved. Beach bakes will also require extra labor charges. In addition client will be responsible for obtaining permission and fire permits needed for us to legally provide service.

Grill Substitution Options Marinated boneless, skinless chicken breasts or tenderloin steak

Condiments Salt, Pepper, butter pats, lemon wedges, melted butter, clam broth, anything needed for grilled items.
Entrée alternatives (NOT Substitutions...priced upon request) Grilled Tuna or Swordfish Steaks, Kabobs, Shrimp, Scallop, Veggies, Fish...or combos.
